| TAIPEI (Taiwan News) — Tainan is celebrating oyster harvest season, with the city government partnering with more than 50 restaurants and oyster farms to promote creative dishes featuring locally sourced seafood.
At a promotional event held on Monday in Qigu District, Tainan Mayor Huang Wei-che (黃偉哲) said oysters have long been a staple of Taiwanese cuisine, appearing in everything from street food to fine dining, per CNA. He said Tainan’s coastal districts, including Qigu, Beimen, Jiangjun, and Anping, benefit from favorable water quality, tidal conditions, and geography, making them ideal for oyster farming and producing high-quality oysters. Huang said the city hopes to boost awareness of locally sourced oysters through marketing campaigns and strengthen the Tainan oyster brand. He added that oysters can be prepared in a variety of ways, including oyster congee, oyster omelets, fried oyster fritters, crispy oyster dishes, and oyster noodles, and invited visitors to experience the region during peak harvest season. According to the Tainan City Agriculture Bureau, oysters are often referred to as the “milk of the sea” because of their high nutritional value and smooth, sweet flavor. The main harvest seasons run from October to February and from March to June, per CNA. The bureau said Beimen District is a major hub for horizontal oyster farming, with around 3,000 oyster beds. It added that the Tainan oyster brand also serves as a traceability system to ensure product quality and consumer confidence. The campaign brings together local restaurants and aquaculture operators to showcase a wide range of dishes, including innovative offerings such as oyster burgers, highlighting Tainan oysters from farm to table. |
